Cod: Tempura Batter

  • 6-8 pieces Cod
  • 1/2 cup Flour
  • 1/3 cup Corn Flour
  • 1/2 tsp Fine Salt
  • Pepper to taste
  • 8 fl oz Beer or Seltzer Water
  • Sea Salt to serve
  1. Turn fryer dial to 350 degrees to heat the oil. *Wait for green light to turn off
  2. Meanwhile, pat cod dry with a paper towel
  3. Mix the flour, salt and pepper in a bowl
  4. Add in beer or seltzer water just before you are about to fry the fish
  5. Make sure not mix too much, leave the batter mixture a little bit lumpy for the right outcome of texture
  6. Coat each piece of cod with a layer of batter
  7. Place freshly battered cod into fryer basket (3-4 pieces at a time) and drop into the oil
  8. Let fish fry for at least 5-7 minutes depending on the thickness of your fish
  9. The color of the batter should be golden brown
  10. Serve with sea salt and tarter
